Aromatic rice with mushrooms and parsley


Ingredients:
- a bowl of rice (about 250 g)
- a mug of red wine
- 250 g mushroom mixture (champignon, pleurotus, etc.)
- 3 cloves of garlic
- two lettuce
- a chili
- 2-3 tablespoons thyme
- two tablespoons extra virgin olive oil
- soy sauce
- ½ bunch of parsley
- 3 tablespoons lemon juice
- salt
- pepper.

Total cooking time: approx. 45 min.

Servings: 4

Preparation:
1.Wash the rice. In a pot put the rice and two mugs of water. Once it starts to boil add the wine and reduce heat. Wait the rice to cook, stirring occasionally slightly. After the rice is cooked drain in a sieve the excess water.
2. Wash the mushrooms and cut slice. In a hot pan with olive oil cook the mushrooms with thyme for 2 minutes. Seasoned with salt, pepper and then put chopped garlic and chili slices. When the mushrooms are done add chopped parsley and sprinkle with lemon juice. Leave for about 2-3 minutes and take the pan from heat.
3.Transfer the rice in pan, sprinkle with soy sauce, mix well and serve with lettuces  torn to shreds.
