Omelette with spinach, feta and spring onion


Ingredients:
- 6 medium free range eggs
- 200 g baby spinach
- 200 g feta cheese
- 3-4 cherry tomatoes
- 4-5 spring onions
- extra virgin olive oil
- salt
- freshly ground pepper.

Total cooking time: approx. 20 minutes

Servings: 2

Preparation:
1.In a large bowl mix the eggs with salt and pepper. In a hot pan with olive oil and add the eggs and let simmer for about 2-3 minutes. Then add spinach washed, sliced onions and seasoned with salt and pepper. Cook another 3-5 minutes until the spinach became soft and take the pan off the heat.
2.Put on the plate: omelet with spinach, feta cheese crushed with hands and on top complete with sliced cherry tomatoes.
3.Serve the preparation warm.
