Marinated chicken with vegetables in the oven


Ingredients:
- two chicken drumsticks
- two little wings
- 600-700 g medium carrots
- 3 red onions
- 8-10 pieces of garlic (4-5 pieces left in the shell)
- a tablespoon of good quality mustard
- a sprig of thyme
- juice of half a lemon
- a bunch of parsley
- extra virgin olive oil
- salt
- pepper.

Total cooking time: approx. 90 min.

Servings: 2

Preparation:
1.Clean, wash the chicken well and dry him on a kitchen towel. Make 2-3 dimple in each piece of chicken. Put the chicken in a bowl. Grated half of garlic and rubb the chicken long with thyme chopped off. Sprinkle with lemon juice, mustard, salt and pepper. Mix well and leave to marinate for 15-20 minutes in the fridge.
2.Meanwhile clean the carrots and onions. Cut the onions and carrots in half and seasoned with salt.
3.Preheat the oven. In a tray put the chicken in the middle and all around the carrots, onions, rest of garlic crushed with hand,
4.Put the tray in the oven for about an hour. In this time mix the carrots not to strengthen.  10 minutes before removing from the oven add chopped parsley on top.
5.Serve the dish warm.
