Chicken taco with homemade tortilla


A great dish who deserves all the time.

Ingredients:
For tortilla:
- 250-300 g plain flour (no rising)
- salt
- water
- extra virgin olive oil
For stuffing:
- 400 g chicken breast
- a large red onion
- 1/2 chili
- 300 tomato cherry
- 200 g canned red beans
- a bunch coriander (or parsley)
- salt
- freshly ground pepper.

Total cooking time: approx. 120 min.

Servings: 3

Preparation:
1.Prepare the dough: On a kitchen counter top or a large bowl put the flour, salt, water, olive oil and mix very well. We must obtain the dough homogeneous (not tough and not soft). Make 4- 6 balls like billiard balls. Wrap the balls in kitchen foil and put in the fridge for 10 minutes.
2.Prepare the chicken. Preheat the oven at 180 degrees. In a baking tray or pot put the meat (seasoned well with salt and pepper). Leave in the oven for about 30 minutes until nicely browned on top.
3.Prepare the stuffing: In a large bowl cut onion slices, tomatoes in quarters, drained beans, coarsely cut coriander, a little bit of oil and seasoned with salt and pepper. Put the chicken cut into slices.
4.Remove the dough from the fridge and we stretch as a pancake. In a hot pan without oil (on low heat) cook the dough 1-2 minutes on each side. Then right away shaping each tortilla.
5.Fill each tortilla with stuffing and the dish is ready.
