Cod fillet in the oven with tomato sauce


Ingredients:
- 450 g frozen cod fillets
- a handful peeled olives
- 200 g cherry tomatoes
- 250 g tomato paste
- two red onions
- two Kapia peppers
- ½ bunch of basil (or dry)
- salt
- freshly ground pepper.

Total cooking time: approx. 65 minutes

Servings: 4

Preparation:
1.Wash the tomatoes, cut the peppers into small cubes and onions cut in quarters.
2.Wash the fish and seasoned with salt and pepper.
3.Preheat the oven. In a tray with baking paper put the vegetables, chopped basil and leave for about 15 minutes until the vegetables are nicely browned. Add tomato paste and fish, seasoned well and wait for another 15 minutes until the cod is cooked.
