Tagliatelle with turkey and red sauce


Ingredients:
- 500 g tagliatelle
- 500 g minced turkey
- 700 tomato paste
- 250 g cheddar
- two medium onions
- one chilli
- 4 cloves of garlic
- extravirgin olive oil
- two tablespoons dry thyme
- salt
- freshly ground pepper.

Total cooking time: approx. 65 minutes

Servings: 5-6

Preparation:
1.In a pan with water and a little bit of olive oil boil the pasta.
2.In a large pan with olive oil cook the onion and garlic for 2-3 minutes. Add the meat and cook until it changes color, stirring occasionally. Seasoned with salt, pepper and leave until the excess of water drops. Then add tomato paste, thyme, hot pepper slices and simmer for about 5 minutes. Spice more if is necessary.
3.Preheat the oven. In a tray greased with olive oil put in layer: one of pasta,  one of sauce and the last one of chedda. Continue in layers until we remain without ingredients. Set aside 50 g of cheddar for serving.
4.Put the tray in the oven and leave for about 30 minutes, until nicely golden brown on top.
