Broccoli salad with cauliflower and bacon


Ingredients:
- 500 g fresh broccoli (can be used frozen)
- 500 g fresh cauliflower (can be used frozen)
- 5 slices of  smoked bacon
- 50 g pitted olives
- 50 g parmesan
- 4 tablespoons extravirgin olive oil
- a teaspoon vinegar
- a teaspoon lemon juice
- salt
- pepper.

Total cooking time: approx. 35 min.

Servings: 4-5

Preparation:
1.Wash and cut broccoli and cauliflower into medium pieces. In a pot boil them for about 5 minutes. Drain the vegetables into a sieve.
2.Into a pan cook the bacon until it becomes dark.
3.Prepare the dressing: in a jar put the olive oil, vinegar, lemon juice, salt, pepper and mix very well. We must obtain a balanced taste and not to exaggerate with the flavors.
4.Into a big bowl put the broccoli, cauliflower, bacon, olives, dressing and mix until the flavours are combined.
5.Serve the salad with parmesan sprinkle on top.
