Ingredients:
- 1.5 kg
potatoes
- 300 g champignon
mushrooms
- two
onions
- a
pepper
- a
zucchini
- a
carrot
- 5-6 pieces
of crushed garlic
- 3-4
spring onions
- a
handful parsley
- 50 ml
sunflower oil
- three
tablespoons tomato paste
- salt
-
pepper.

Servings: 4-5
Preparation:
1.Clean and cut the potatoes in half. In a large pot with
oil put the potatoes. Add gradually the vegetables: the onions finely sliced,
spring onions and carrots (cut in pieces), pepper, mushrooms and the zucchini (cut in
medium pieces). Stir together for a few minutes.
2.After the vegetables is soft spice with salt and pepper.
Boil for about 20 minutes and stir again.
3.Preheat the oven. In a baking pan add the vegetables, garlic,
tomato paste and bake for 15 minutes.
4.We serve the dish with the parsley (finely chopped)
sprinkle on top.
