Ingredients:
- A
medium chicken breast
- fresh
sage leaves
- 200 g
bacon
- a
handful parsley
- a
handful arugula salad
- extra
virgin olive oil
- two
tablespoons vinegar (I used apple vinegar)
- salt
-
pepper.

cooking time: approx. 45 min.
Serving: 2-3
Preparation:
1.We cut the chicken breast in two pieces. Then cut the meet
in four equal pieces (on lengthwise). Season with salt and pepper on both
sides.
2. Put a sage leaf on each piece of chicken. Wrap the
chicken breast in the bacon. Do the same with each piece of chicken and then put
toothpicks in each piece of chicken.
3.In a hot pan with extra virgin olive oil cook and meet for about 20-25 minutes.
4.Prepare
a dressing: in a bowl add 4 or 5 tablespoons of olive oil, 2 tablespoons vinegar,
salt, pepper and the parsley, finely chopped. Mix and then add the dressing
over the arugula salad.
5.We
serve the chicken with arugula salad, parsley and the dressing.
