Ingredients:
- a
pastry package (450 g)
- 500 g
chicken breast
- a red
pepper
- a large
red onion
- 200 g
black beans (in jar)
- 150 g
mozzarella
- coriander
seeds
- cumin
- ½ parsley
bunch
- an egg
- extra
virgin olive oil
- salt
- pepper.
Total cooking time: approx. 90 minutes
Servings: 4-5
Preparation:
1.Cut the
chicken into medium pieces and seasoned well with salt and pepper. In a hot pan
with olive oil cook the chicken and seasoned again with coriander and cumin (crushed
in a mortar). Put onion, pepper, chopped and wait until the chicken and the
vegetables are softer. Take off the pan from the heat and leave to cool.
2.Strech
pastry in the pan and add: chicken with vegetables, beans, cheese (all sliced)
and chopped parsley. Roll the dough and close in on the sides.
3.In a
pan or baking dish, greased with olive oil, put the roll and brush it on top with
beaten egg.
4.Preheat
the oven. Put the roll in the oven for about 25-30 minutes until nicely browned
and the dish is ready. During the bake prickly the dough with a toothpick to
hang.
