A quick and
economic recipe, but in the same time delicious.
Ingredients:
- 500 g
chicken breast
- 4-5
medium mushrooms
- a chili
- 30 ml
white wine (optional)
- a
sprig dried thyme
- 250 g
vegetables (i used frozen mexican mix)
- extra
virgin olive oil
- salt
-
pepper.
Total cooking time: about 45 minutes.

Preparation:
1.Prepare
the vegetables: In a hot pan with olive oil cut chilli for about one minute
(cut into rings).
Put in
the pan mushrooms cut into slices and let 2-3 minutes then put the vegetables
mix, seasoned with salt, pepper
and cook
(stirring occasionally) until the flavors mingle. Sprinkle on top with wine and
let the alcohol evaporate.
2.Meanwhile
prepare the chicken: wash the meat, cut into small pieces and seasoned well
with salt and pepper.
In a
bowl / another pan flavoring the olive
oil with the sprig thyme. Fry the chicken until it is cooked. Then we
transferred
the meat
in the pan with vegetables.
3.Let on
the heat for 5-10 minutes (during which frequently mix) and the recipe is
ready.
