Ingredients:
- 6 chicken drumsticks
- 1 kilogram potatoes
- 3 red onions
- 1 cup of white wine
- a handful of parsley
- 4-5 sprigs rosemary
- two sprigs thyme (you can use dry)
- 3 garlic pieces
- two spring onions
- extra virgin olive oil
- salt
- pepper.
Total cooking time: approx. 60 min.
Serving: 2-3
Preparation:
1.In
a pot boil the potatoes in their skins.
2.Prepare
the chicken: In a frying pan with olive oil put the chicken and seasoned with
salt and pepper. Cook for about 10 minutes until the meat its browned. Add half of the rosemary leaves, thyme, sliced
onions, crushed garlic and wine. Wait 5 minutes and then transfer all the
mixture into a pan. Leave in the oven for approximately 30-40 minutes until the
meat is soft and cooked.
3.
Peel the potatoes and
cut them in a centimeter thick slices. Put the potatoes in the pan then seasoned
with salt and pepper. Complete with the other half of rosemary, spring onions
and cook the potatoes until are browned. Finally add the chopped parsley.
4.Serve
the potatoes with chicken.
